Cairngorms Christmas Treats

With Christmas on the horizon, thoughts at What’s On HQ invariably turn to food! Namely what locally grown produce we will be piling on our plates this festive season and the abundance of restaurants and hotels that will be serving up a host of treats on their menus.

So, to satisfy ourselves we caught up with three chefs around the Cairngorms National Park to discuss all things food and ask them how they will be celebrating the 2011 festive season. Prepare to abandon the diet until New Year!

  1. How did you become a chef?

NK - I was meant to go to Abertay Uni to study chemical engineering, but spent the summer working as a KP in a hotel and when the commis chef failed to appear one day I stepped in – that was 17 years ago and I have still to go to uni!

RF - Muckrach was my first experience of running a hotel with a restaurant, and a very steep learning curve indeed.  I delight in discovering new tastes, new food experiences, and I wanted to impart some of this joy in the food we served.

  1. What’s your perfect Christmas day meal ?

CM -  For me, it’s breast of wild Gunknowe Loch grouse with all the traditional trimmings.

RF – With the great company of friends and family I much prefer goose to turkey. Goose is harder to cook and takes time and patience but it is really worth the effort as the meat is rich, dark, gamy and warming. Goose fat roasted potatoes with thyme and a sprinkling of sea salt makes a perfect partner with this wonderful bird. And of course finished with a Christmas pudding. I try and make mine in late August, so it has months for the flavours to meld together.

3. What food or smell puts you in a festive frame of mind?

NK – nice aromatic flavours like cinnamon and cloves

RF – The delightful smell of mince pies cooking in the oven with slightly puffed pasty and the wonderful tangy taste of the mince meat.  The sweet bonfire smell of cinnamon and rum and the dark alluring scent of molasses sugar. The bouquet of pine cones and mulled wine with its lovely aroma of stewed plums and of course the tangy, zesty fragrance oranges.

CM - The warm aroma of mulled wine and chestnuts roasting on an open fire.

 

 

4.What local produce is always on your shopping list?

NK – at the hotel we get our meat from small local independent suppliers – our pork and lamb come from Wark Farm in Cushnie and pure Aberdeen Angus beef comes from Cairnton Farm near Lumphanan.

CM - White mountain hare, Sikka deer – especially the haunch for smoking on our in-house smoker and the loin for searing – and Clava Brie.

RF – The venison is outstanding, so it’s always on the menu when it is available – it’s wild off the hills around Tomintoul and has dark rich meat that goes so well with Juniper, a local plant.  We serve it with the truly remarkable and very special venison haggis, which is the king of Scotland’s famous pudding. I also love the local Speyside smoked salmon with rich oaky flavours that just comes alive with a little lemon juice and a sprinkle of cracked black pepper.

 

5. Best Christmas Eve or Boxing Day dish?

RF- Cold goose with baked potatoes loaded with softly melting Stilton, buttery and creamy, soft velvety brie and hard pungent cheddar. Crisp crunchy homemade coleslaw; tart, vinegary pickled onions that crunch when you bite into them, soft and yummy warm bread, pickles and homemade chutney. All washed down with a good glass of red wine. Then fried Christmas pudding and mince pies with a glass of port.

NK – I love having cold turkey or goose on Boxing Day with bubble and squeak made from the left over vegetables

 

6. Who cooks at Christmas in your household?

CM – I normally cook but I tend to leave the mess for everyone else to clean up!

RF – Since we’ve been here and I’ve been cooking I tend to. Last year the family came up and we all had a great time!

 

  1. Any Christmas foods you wouldn’t touch with a barge pole?

RF - Cheap, nasty mince pies – you know, 48 pies for 20p. Intensively reared deep frozen turkey that dries to dust as soon as you put it in the oven.  Tinned Christmas pudding – eugh!

 

8.  And lastly, what’s the best thing about Christmas in the Cairngorms?

NK – The fact that you are almost guaranteed a white Christmas!

RF – The snow, the reindeer, the scenery, the whisky, the wonderful crisp cold weather, warm fires and the smell of pine and finally the great people.

CM - The stunning scenery and being with my good friends at the Old Bridge Inn!

CairnGorm Open for Snowsports Again This Weekend……
CairnGorm Mountain will be open for snow sports this weekend. Skiing is limited to the Cas side only, suitable for intermediate and expert skiers only (no beginners – sorry). Skiing uplift will be from the train with mid station stops and the M1 poma. The Traverse, 105, Gun Barrel, M1 and White Lady (experts only) will be open down to the mid station.
Last winter’s season ticket is still valid. The ski day ticket price for this Saturday and Sunday and up until next Friday will be £20.50 for adults and students, £14.50 for seniors and £12.50 for juniors. Ski Hire will be open from 9am at CairnGorm this weekend, so you can hire any kit you need. Full day prices apply for hire.

MOUNTAIN WEATHER OUTLOOK
Saturday 20th November:
Wind E 10-20mph. Light snow showers above 900m. Extensive cloud but will soon be 750m or above. Visibility generally excellent, but poor in cloud. Temp at 900m 0C dropping to -1C or -2C. Freezing level becoming 750m.
Sunday 21st November: Wind NE 15mph. A few snow flurries. Extensive cloud between 900m and 1200m, with a few patches at 650m. Occasional sunshine and excellent visibility. Temp at 900m -1C. Freezing level 750m.
Outlook: Much less windy over the coming week but with the wind direction being mostly north-easterly, temperatures on higher summits will become widely below freezing point. Much dry weather but with snow showers coming in off the North Sea.

The Big Freeze exhibition
of photographs taken by staff from last winter is on display in the T Bar and on the stairs up to it and in various other locations. Many of the pictures are for sale.
Euan Baxter, local photographer and snowsports enthusiast is displaying his collection of winter photographs Vanishing Tracks in the Ptarmigan Restaurant (closes 4.00pm) until the end of December. Inspired by 30 winters spent in Strathspey, Euan is transfixed by the beauty of these months and the ever-changing conditions. Mounted and framed prints are on sale.

Walk Up, Train Down
Visitors can enjoy a mountain walk up to the Ptarmigan top station, but expect full winter conditions. Paths are covered with drifting snow, and it will take much more energy than usual. You are welcome to come in to the Ptarmigan building to take a break from your walk or you can buy a train ticket to come down again. (Dogs may come down on the train for a small charge). Winter clothing, boots and gaiters advised. Check the weather forecast and up to date conditions at the Ranger Base before setting out.
Camera Obscura: This free attraction is located in the Mountain Garden near the Base Station and enables visitors to see 360-degree real-time views of the surrounding landscape.
Shopping: Look out for clothing, walking essentials, fabulous gifts and accessories in our shops.
Eating and drinking: Home-baking every day in our restaurant and cafe bar and hot meals featuring locally-sourced ingredients in the mountain-top restaurant. ‘The Chocolate Mountain’, a huge concoction of hot chocolate, marshmallows and cream beckons in both locations.

Sunday 28th November – Inverness Airport Christmas Fayre – If you are passing through the airport, come and say hello to us at our stand. The airport’s first Highland Christmas Fayre will be celebrating all that is fresh, local and handmade in the Highlands of Scotland. A great opportunity to find some original Christmas gifts.

Tuesday 30th November – St Andrews Day Promotion
To celebrate St Andrews Day we will be offering a ‘2 for the price of 1’ ticket on the funicular. The cheaper ticket of the two will be the free ticket. Please note this offer does not extend to Snowsports tickets and is for full priced tickets only. A perfect opportunity to bring a friend, enjoy some snowy views, huge hot chocolates and festive shopping.

Locals to ride funicular for £1!

CairnGorm Mountain is inviting local residents to come and visit the mountain and ride the funicular train for just £1 this November.

Usually the funicular is closed throughout the month of November with essential maintenance taking place prior to the busy winter season. However, this year most of the work was carried out during the longer summer evenings and the remaining work will be done on the 1st, 2nd and 3rd of November only, when the funicular and the Ptarmigan top station will be closed.

The £1 offer for people living within the PH19 – PH26 postcode areas is available on Saturday 6th, Sunday 7th, Saturday 13th and Sunday 14th November and applies to all types of day tickets, including Down Train only tickets. Tania Alliod, Marketing Manager explains, “All customers need to do is to fill out the voucher that they will find printed in the issues of the Strathspey and Badenoch Herald published on 3rd and 10th November and bring it along to the ticket office with a recent utility bill to prove their residency in the area. They will be able to purchase up to two £1 tickets with every voucher presented. We just ask for an email address in return so that we can update people with mountain news from time to time.”

November will be a great time to make a visit to the mountain. The Mountain Shop has now opened its Christmas shop selling a range of beautiful festive gifts and decorations and the new must-see wood carvings, made by Iain Chalmers, in the Base Station are definitely worth a visit.

EARLY CHRISTMAS PRESENT FOR SKIERS

 

 

 

 

 

 

 

Scotland’s weather has delivered an early Christmas present for skiers and snowboarders, with four of the country’s five mountain ski areas already operating, and the other expecting to open very soon. And with the snow and cold weather forecast to continue through the rest of the week and over the weekend, there should be plenty of opportunities to work off the excesses of Christmas dinner, cake and mince pies with some healthy skiing or boarding at CairnGorm, Nevis Range, the Lecht or Glenshee. Glencoe is also expected to open over the holiday period; although there is enough snow, the new owners have had to condense six months’ work into a very busy six week period, and a few extra days are still required before they’re ready to welcome skiers and boarders.

 

Heather Negus, Chair of ski-scotland, said, “there has been a fantastic early start to the Scottish ski season this winter – in fact, it’s the best since 1999! CairnGorm has already been operating for a few weeks, and this is the first time since 2003 that Nevis Range has opened for snowsports before Christmas. The forecast is also really promising for some great fun and wicked sliding over the holiday period.”

 

For the first time, the five mountain ski areas are offering an all-area five-day ski pass. These are valid for any five consecutive days at any of the five areas, and can be bought at any of the ticket offices: CairnGorm Mountain, Glencoe Mountain, Glenshee, The Lecht and Nevis Range. The new pass has been produced in response to customer demand, and will allow skiers and boarders to sample each area, stick with one, or follow the best snow and road reports. The pass can be used for five days at one ski area, one day at each ski area – or any combination – the only requirement is that the five days are consecutive.

 

Heather continued, “we’d also like to remind our customers to check road conditions before they leave – remember that some of our mountain ski areas are served by Britain’s highest roads, at well over 2,000ft above sea level. This can easily be checked on the official website www.ski-scotland.com where you can also check on lifts due to open and snow conditions, with webcam images, before you leave home, or on your mobile. And if the roads north are snowbound, there’s also the chance to whet your appetite for mountain skiing or boarding, in the Central Belt of Scotland, at SNO!zone in Glasgow.”

Note to editors:

·         For winter 2009/10, the 5-day all-area ski pass is only available for adults, cost £115. All five ski areas already offer good deals for children of different ages, with prices ranging from £10 for one day to £64 for 5 days, and offer family day tickets ranging from £70 to £90.

·         Owners of all-area ski passes are advised that the pass is not transferable, and they therefore may be asked to show ID at individual ski areas. Otherwise, terms and conditions of use are those applied by the ski area where the ticket is being used.

·         Winter 2008-9 attracted many people to the Scottish snowsports areas who have not visited before, or not for a long time. All the areas reported a high number of first-time visitors who normally ski or snowboard abroad – a positive spin-off from the current economic climate.

·         The number of people who skied or snowboarded in Scotland in winter 2008-9 was 159,885, worth around £4M to the snowsports centres and at least £12M to the Scottish economy.

The Week Ahead at CairnGorm Mountain

 

Normal Operation Resumes on Saturday 28th December.

Following the annual maintenance on the railway, we plan to resume normal daily operations on Saturday 28th November for the mountain railway and the Ptarmigan Top Station. Wintry conditions are set to continue and the skiing situation is being reviewed on a daily basis. Keep an eye on the web site or sign up for Twitter and follow us at CairngormMtn.

 

OPENING TIMES

From Saturday 28th December the last train up will be at 15.20 and the last train down will be 16.00. The Cas Bar and Shop at the Bottom will be open daily from 10am. Trains run every 20 minutes or subject to demand with the first train up 10.20am. Skiing conditions are being reviewed daily.

 

Bus Service – there will be no SUNDAY bus service to CairnGorm Mountain until further notice. The last bus down the mountain to Aviemore leaves at 4.40pm

MOUNTAIN WEATHER OUTLOOK

Thursday 26th November: Wind  W or SW 35-50mph, gusting 60-80mph. Bands of showers with longer periods of snow and blizzard conditions above 750m. Cloud base will rise and fall between 700m  and 950m Temp at 900m 0 to 1C. Feeling much colder on higher slopes.

Friday 27th November: Wind W or SW 25 – 40mph, gusting 50 – 60mph. Wintry showers moving in from the West. Variable cloud and patches of sunshine in between wintry showers. Temp at 900m 0C to -1C.

Outlook: Low pressure will bring persistent wintry showers and lower temperatures until the end of the week.

The Cas Bar and Shop at the Bottom will be open at 10am. There is no Christmas market this year but we have a Christmas shop within the Mountain Shop in the Day Lodge with lots of Christmas gift ideas. And there is new winter stock in both our shops including Pachamama jumpers and hats and Weird Fish clothing (including children’s). Also Barts hats and accessories and a big range of Sealskinz waterproof gloves and hats.
